That’s what my Sardinian friend Giovanni told me. He told me that Cassola is one of Sardinia’s beloved fish soups, made with the whole grouper—even the head.

It began as a fisherman’s dish, born from simmering fish that couldn’t be sold with tomatoes, garlic, seawater, and wine.

It reminds me of the Japanese spirit of “Itadakimasu”—giving thanks for every life that becomes our meal.
